The Five S’s of Wine

Wine is a wonderful thing, but when you learn from Erin Dowsett, Supervisor at Mountain Flowers it tastes even better!

Erin guided us through some of the best wines from Summerhill Pyramid Winery in the Okanagan Valley, British Columbia. The pyramid is especially unique as it is second only to the Great Pyramid of Egypt for alignment and precision and is used in the art of winemaking. The twenty year experiment at Summerhill Pyramid Winery has been proving the effect of sacred geometry with its track record of delicious wines and international gold medals.

As we sampled four Summerhill wines Erin taught us the importance of the five S’s of wine tasting: See, Swirl, Sniff, Sip, Savour.

1. See – Hold glass up to view colours

  • Wine should reflect proper colour for maturity.
  • For whites, deep colour indicates sweet wine. For reds, deep colour indicates full body; warm colour indicates warm wine.
  • There should be no cloudiness or floating debris.


2. Swirl and Sniff- Swirl wine in your glass slightly to release aroma

  • Lift to nose and take a gentle, deep sniff.
  • Aroma intensity and quality relects.

3. Sip – Sip a mouthful of wine

  • Swish around all parts of mouth, and then swallow.
  • White wine taste is based on sweetness and acidity.
  • Red wine taste is based on sweetness, acidity, and tannin.
  • Sweetness and acidity depend on grapes used.

4. Savour – ENJOY!

Every Thursday, from 5:00pm to 6:00pm Erin holds a wine tasting seminar in the Lobby at Fairmont Hot Springs Resort. Only $10 per person and you learn about a variety of British Columbia wines and have the opportunity to sample and compare.
